The story behind the dish
Kamajī may look stern in Spirited Away, but he quietly cares for those around him, helping Chihiro and protecting the soot spirits.
Bring that warmth to the table with a tempura shrimp bowl. The ingredients are listed here; watch the channel video for the detailed cooking demonstration.

How to make it
- Make the sauce: combine 100 ml water, 1 Japanese soup stock packet, 50 ml soy sauce, 50 ml mirin, 10 ml sake and rock sugar to taste in a saucepan. Bring to a simmer, reduce until slightly thickened and transfer to a small bowl.
- Prepare the shrimp mixture: finely chop 3–4 shrimp and mix with 1 egg yolk and cornstarch as needed. Shape this mixture around the smaller shrimp to make them plump.
- Make the batter: mix 1 egg, 270 ml cold water and 160 g cake flour. Put extra cake flour in a separate dish for coating.
- Coat the shrimp: dust the shaped shrimp lightly with cake flour, then dip them in the batter.
- Fry: heat oil in a pan and fry the battered shrimp until cooked through and crisp. Lift them out and drain. Refer to the video for the frying demonstration.
- Layer the bowl: add a layer of cooked rice, then 1 soft-boiled egg, nori and a little sauce. Cover with another layer of rice.
- Finish: spoon a little sauce over the rice, scatter with tempura flakes and place 2 shrimp tempura on top. Serve with pickled radish if you like.
